Zoom Very delicious #lowcalorie dinner tonight. #Quinoa Aguadito (#Peruvian #Chicken & #Coriander #Soup) - courtesy of @womensfitnessuk!

Ingredients:
• Fresh Coriander
• 1 #Onion
• 2 #Garlic Cloves
• #OliveOil
• 1L of #ChickenStock
• Quinoa (well rinsed)
• Chicken (I used chicken thigh from our local butcher, it’s cheap and tender! We like to get all of our meat locally as it supports our independent shops in the area and helps maintain their business)
• Frozen #Peas
• #SeaSalt

1) Separate the coriander leaves and stems. Set aside the leaves for later and roughly chop the stems.

2) Put stems, onion, garlic and olive oil into a good processor and blitz into paste.

3) Place saucepan into medium heat. Add coriander paste, fry for 3 minutes until soft.

4) Add chicken stock, bring to a boil. Add quinoa and chicken and leave to simmer and poach for 15 minutes (I also added the bones for added flavour, these can be removed later). When chicken is cooked through remove and shred with two forks to add again later.

5) Add peas and chicken, heat until piping hot.

6) If you have a pestle & mortar, crush coriander leaves with sea salt and olive oil then stir into soup before serving. I don’t have one, so I chopped the salt with the coriander leaves and 1 #ScotchBonnet #Chilli for a bit of heat and added flavour. 

Stir in, serve with some lemon wedges & enjoy. Xx
